NAPA VALLEY

CABERNET SAUVIGNON

 

 ·  GRAPE SOURCING ·

 

Grapes for this wine were sourced primarily from the western side of Pope Valley a few miles northeast of the town of Rutherford.   The vineyards well-drained slopes, alluvial clay soils and sunny microclimate result in Cabernet Sauvignon that displays the rich, ripe dark fruit characteristics for which Napa Valley Cabernet Sauvignon has garnered world acclaim.

The grapes received a cold-soak maceration prior to fermentation to increase concentration.  After fermentation, various blend components were aged for 18 to 24 months in primarily new French Oak barrels.  The addition of Red Varietals including Petite Sirah provides additional fleshy, spicy components and fruity notes.

 

 · WINEMAKER'S NOTES ·

 

Our Cabernet Sauvignon is a wine of structure and finesse, with blackberry and cassis fruit aromas and flavors, backed by subtle notes of chocolate and anise.  Its suppleness lends it to drinking now, but it will age gracefully over the upcoming decade.  The wine lends itself to classic Cabernet fare: Filet Mignon with Wild Mushrooms or a simple grilled New York strip steak.

SONOMA COUNTY

CABERNET SAUVIGNON

 

 ·  GRAPE SOURCING ·

 

The majority of grapes for this wine were sourced from California’s Sonoma County, a growing area that has emerged as of the world’s leading growing regions for Chardonnay. Close to the sea, the region’s summer warmth is moderated by fog and other cooling maritime influences, creating an ideal climate for Chardonnay grapes.  Grapes from Sonoma County’s cool climate sub-appellations including Russian River Valley and Sonoma Coast have become known for producing superb, classically structured Chardonnay.

 

· WINEMAKING ·

 

After a gentle pressing, the grapes were cold settled and racked before fermentation. A majority of the blend was barrel fermented and aged with a combination of natural yeasts. After fermentation, the wine went through sur lies and partial malolactic fermentation, increasing the silky texture and lengthy finish in the wine.

 

 · WINEMAKER'S NOTES ·

 

Our Chardonnay is a wine of balanced richness with hints of vanilla and Gravenstein apple on the nose, carrying through to the palate with an elegant, silky finish. This Chardonnay is delicious on its own, or try pairing it with grilled wild Alaskan salmon with braised fennel with baby potatoes.

DRY CREEK VALLEY

ZINFANDEL

 

 ·  GRAPE SOURCING ·

Grapes for our Zinfandel were drawn from Sonoma County’s Dry Creek Valley, an area that is has emerged known one of California’s top growing area for Zinfandel.   Sonoma County’s diverse growing climates each provide unique characteristics to Zinfandel grapes.  The Dry Creek Valley tends toward very dry and warm growing conditions during the day, with ample hillside vineyards.  Grapes grown under these conditions are noted for smaller size, concentrated flavors, structure and richness on the palate.

· WINEMAKING ·

 

The grapes were fermented in stainless steel for approximately one week.  After pressing, the wine was aged in a combination of new and used French and American oak barrels which add vanilla and sweet spice notes.  Ripe, rich Zinfandel flavors were enhanced with a touch of Petite Sirah, which provides a rich tannic structure, framing the Zinfandel fruit.

Varietal blend: 100% Zinfandel

 

 · WINEMAKER'S NOTES ·

 

This Zinfandel is a wine of structure and finesse backed by dark fruit flavors, including blackberry, cherry along with a hint of spice. Its suppleness lends it to drinking now, but it will age gracefully over the upcoming decade.  The wine will pair well with roasted or grilled meats such as filet mignon or a New York strip steak.
